Objective: To open an experimental lab in order to make the participants more familiar with the secrets of tea in comparison to wine and other beverages, to make a tasting experiment in order to see options for pairing and to gain data for next research projects.
Apeldoorn is located in The Netherlands and there, in 1620, the first companies imported tea and introduced it to Europe. This spirit the organizers would like to transfer to 2022 showing innovative approaches to tea consumption and production, joint activities with culinary links. The organizing researches from Breda, The Hague and Dresden have collaborated since 2020 in the fields of European tea cultures and traditions incl. joint publications and lectures. They would like to embrace the EuroCHRIE participants with the fascinating world of tea and more. For this, it is also planned to invite a US researcher virtually.
The variety of tea and the options of pairing are relevant for F&B experiences as marketing activities and culinary attractions. The training of hotel and tourism professionals as well as the development of guidelines and handbooks should be discussed. This, should be seen as a first step of a discussion if tea as a topic could be implemented more intensely in the curriculums of culinary/hospitality/tourism studies in European universities.
